Resep Coto Asli Makasar


Coto Makassar
Bahan-bahan    
  1. 1 kg daging (boleh mix jeroan tp sy tidak pakai)
  2. 3 ltr air cucian beras
  3. 250 gr kacang tanah goreng,haluskan
  4. 4 lembar daun jeruk

Bumbu halus :
  1. 8 bawang merah
  2. 5 bawang putih
  3. 1 sdm ketumbar sangrai 
  4. 1 sdt jintan
  5. 1 ruas lengkuas
  6. 4 batang serai
  7. 1 sdt lada bubuk
  8. 1 sdm asam jawa
  9. 1 sdm gula merah
  10. Secukupnya garam

Pelengkap :
  1. Sambal cabe rawit,jeruk nipis
  2. Taburan daun bawang,seledri dan bawang goreng
  3. Ketupat,lontong, atau bisa juga nasi

Langkah:              
  1. Cuci bersih daging,potong sesuai selera.
  2. Rebus daging dengan air cucian beras,buang kotoran yg ada diatas air rebusan.
  3. Haluskan semua bumbu,tumis bersama dengan daun jeruk kemudian masukkan kacang tanah halus Sampai berubah warna 
  4. Jangan sampai gosong
  5. Masukkan bumbu diatas kedalam rebusan daging,beri garam,koreksi rasa. 
  6. Masak sampai daging empuk.
  7. Angkat dan sajikan
